The collection of old wines remined me of a notice in bygone years posted at the local ski lift bar.
It read, “We will serve no wine before it’s time: 11:30.”
On that note I have heard it said that wine does improve with age. Therefore the second glass is better than the first. And so on.
This old wine lover enjoyed your stories. My favorite wine these days is a Malbec. Never met one I didn’t like. For the sake of economy, it can come in a cardboard box. Cardboard-eau if you please!

I remember they did a skit on Rowan & Martin’s Laugh-In, a take-off of the Paul Masson advertising, like your bar sign. First, a wino in the gutter said, “I open no wine before its time.” After a brief pause, he said, “It’s time!”
Cardboard-eau! I love it! And, I’m certain each glass is better than the last one!
